Grandmother of 10, Lin Johnson-Carlson dreamed of combining her love of cooking, making home cooking simple and empowering homeless women. This year, Johnson-Carlson and her husband, Gene, launched Mimi's Mountain Mixes to accomplish all this and more in Western North Carolina.
Mimi's Mountain Mixes mantra is “Home Cookin' Made Simple ~ Just Add Y'er Favorite Brew & Bake!” The delicious, easy to use baking mixes and business model are a “Win-Win” for all parties involved. The baking mixes are so easy that they only require the addition of a 12 ounce can of beer or carbonated beverage. A portion of each sale is donated to women & children's shelters and Mimi's offers internships that teach a new skill set for shelter residents needing a new fresh start in their lives via the job training program.
Johnson-Carlson states “The WNC area offers a wonderful array of beer selections. It seemed natural to combine the beer culture, using beer to bake and bless others at the same time! Most people think of beer as a beverage and not as an ingredient. However beer is a wonderful ingredient to incorporate into baking. Beer can also be used to create delicious cakes, breads, candy and cookies!”There are currently eight beer baking mix varieties offered by Mimi's Mountain Mixes. (More are in the test kitchen and should be released within the year.)
