All of our varieties start with a base of cabbage & sea salt, to which the mixture of ingredients that make each variety so flavorful and unique is added.
We carefully nurture our product to ensure the highest quality and quantity of lactic acid bacteria, and bring it to our markets as fresh as possible. In fact, our product is still fermenting at time of purchase. Simply treat this product as you would produce and place in a refrigerator--it should last for weeks if not months. That is, if it is allowed to sit in the fridge and not gobbled up immediately!
