I would go with a 8by16 trailer leaving 4 foot for the toung. of course that would be using 2 spots,I have seen stands as small as 6by 9. but to me thats tight.the best thing to do is check with your local health dept. find out what all needs to go inside (sinks,water storage,ect) and then design aroun that.I did see one one of those pop up camping trailers used as a vendor stand. and it was pretty neat.
