I am a professional (personal/private) chef by day. I am originally from Wisconsin & wanted to bring my homemade brat recipe to TX and start a food trailer for festivals. I make everything from scratch. Brats are my staple but I do a Southwestern style beef sausage as well among other delicious offerings.
