I'm a classically trained pastry chef with more than 20 years of experience working in restaurants and resorts, including creating elaborate sugar and chocolate work. After years in professional kitchens, I've come back to the simple pleasure of making beautiful, delicious things to share.

The Sapling is my small collection of handcrafted shortbreads, toffee, pastries, and other simple treats, made with quality ingredients and care. I also believe that the way something is presented is part of the experience, so everything is thoughtfully and beautifully packaged.

For me, The Sapling is about creating beautiful things worth taking home—little pleasures to share with someone you love, give as a gift, or simply enjoy for yourself.
